Sourdough is a living product that thrives best when allowed to breathe, but only for the first day or two. After that, it needs a little help to stay at its peak.
For the First 48 Hours: Keep your bread at room temperature. A bread box, a paper bag, or even just leaving the loaf cut-side down on a wooden cutting board works perfectly. Avoid plastic bags during this time, as they will soften your beautiful, crispy crust.
For Long-Term Freshness: If you don't plan on finishing the loaf within two days, freeze it. Sourdough freezes remarkably well and maintains its integrity for up to 3 months.
Pro Tip: Slice the entire loaf before freezing. This allows you to pull out only what you need, exactly when you need it. Wrap the slices tightly in parchment paper, then place them in a freezer-safe bag.

Nothing beats the experience of warm, fresh sourdough. Whether you are reheating a single slice or an entire half-loaf, here is how to get that perfect "just-out-of-the-oven" texture:
From Frozen (The Single Slice)
The Toaster: Simply pop your frozen slice directly into the toaster. If your toaster has a "Defrost" setting, use it for the best results. Toast to your desired level of golden-brown crunch.
The Oven/Toaster Oven: Preheat to 350°F (175°C). Place the frozen slice directly on the oven rack for 5–8 minutes. This method gives you a restored, crackly crust and a soft, airy interior.
From Frozen (The Full Loaf or Chunk)
The Refresh: If you have a larger piece, mist the crust lightly with a tiny bit of water (just a spritz!). Place it in a preheated oven at 350°F (175°C) for 10–12 minutes. The water helps regenerate the steam needed to crisp the crust while keeping the inside moist.
